To be ultra smart choose the lean breast meat instead of thigh meat; you will consume much less fat and it takes much less time to cook. The best thing about chicken is that it goes with absolutely everything. So you can essentially throw together an impromptu dish with whatever you have in your store cupboard.

Chicken Parmesan
What you’ll need:
· One chicken breast, cut into strips
· An egg
· ¼ cup Parmesan cheese
· ½ cup dried breadcrumbs
· Salt and pepper, to taste
· ½ tsp garlic powder
· 1 tbsp olive oil
· 1 cup tomato sauce from a jar ·
½ cup grated mozzarella cheese
1. Preheat an oven to 400 F so that it heats up while you get on with the rest of the steps.
2. Take a small bowl and beat the egg
3. Take another bowl and mix together the breadcrumbs, parmesan cheese, salt, pepper and garlic powder.
4. Dunk the chicken strips in egg and then dip into the breadcrumb mix.
5. Fry the chicken strips in a skillet using the olive oil for around three minutes.
6. Take a baking dish and spread half of the tomato sauce at the bottom; place the chicken strips on top and then layer the remaining sauce over. Scatter over the grated mozzarella.
7. Bake in the oven for ten minutes till the cheese has melted completely. You now have a beautiful chicken dish fit for one hungry person.

All you have to do is pick up some delicious cheese, healthy organic chicken and a rich tomato sauce and then assemble away.
